From The Mediterranean to Your Toaster Oven: Tnuva’s Malawah & Baked Jachnun

Two popular Yemenite-Israeli delicacies, Malawah and Baked Jachnun, are rapidly becoming a Mediterranean culinary favorite across America, as Tnuva’s Ma’adanot offers these heat & serve frozen pastries at your local supermarket.

In Yemenite culinary tradition, Malawah (pronounced Mala-wach) is served as a crispy fried pancake that is usually eaten with a hard-boiled egg and dipped in s’chug, the tangy Yemenite condiment. Ma’adanot’s Frozen Malawah, which contain 0 cholesterol, can be popped into the oven and served piping hot in 3 minutes. In the USA, many people have employed a modern culinary twist by using Malawah to create crispy Mediterranean pizzas (see recipe below).

Jachnun (pronounced Jach-noon) also has a tradition in Israel of being served on Shabbat morning, with pureed tomatoes and/or s’chug. Today, Maadanot’s Frozen Jachnun can be placed in the toaster oven for 7 minutes and be enjoyed any day of the week. In America, Jachnun has also become the new “kishke”, replacing the traditional high-cholesterol meat sausage slow-cooked in cholent, with the 0 cholesterol Jachnun.

Malawah Pizza Recipe

Servings: 6

Preparation Time: 5 minutes

1 package of Maadanot Frozen Malawah, prepared according to directions

1 ½ cups of Tnuva Mozzarella and Cheddar Cheese, shredded

½ cup of pitted and sliced green olives

 For Sauce

2 cups of tomato paste

2 teaspoons of olive oil

½ cup of ketchup

2 cloves of crushed garlic

1 teaspoon of dried oregano

Salt and pepper to taste


  1. Pre-heat the oven 350°F.
  2. Spoon sauce onto each sheet of Maadanot Frozen Malawah.
  3. Sprinkle cheese and olives on the sauce.
  4. Roll Malawah into a tube.
  5. Place into a baking pan lined with baking sheets.
  6. Score small lines into dough.
  7. Repeat for the rest of the Malawah.
  8. Bake until the dough and the cheese have browned.

Remove from the oven, slice and enjoy!
